I mean my son, not stiff, sticky fine-grained earth. He made the chipotle rub for the chicken. We cooked it so there was a choice of pan-fried or baked thighs.
Clay liked it so much he ate two pieces of chicken. Of course, he chose the pan-fried version.

We Have A Winner -- Meatloaf
Dinner got 12 thumbs up tonight which is probably a miracle seeing that it was meatloaf. I don't like meatloaf, but I actually enjoyed this one.
To make this magical meatloaf you need the following ingredients. Oh, and remember I cook for six. Here goes:
1 lb. ground chicken
1 lb. ground turkey
1 average yellow onion, finely chopped
1 small zucchini, finely chopped (to hide from the non-veggie eaters)
1 1/2 cups bread crumbs
2 teaspoons salt
2 teaspoons garlic powder
1 teaspoon pepper
1 teaspoon oregano
24 ounces Three Cheese Pasta Sauce
4 cups Mexican cheese, shredded
Dabble of Olive Oil
Saute onion, zucchini, spices in olive oil
Mix together chicken, turkey, pasta sauce, bread crumbs and 2 cups of cheese
Add seasoned veggies and mix well
Take half of mixture and pat into bottom of your baking dish of choice
Spread on remaining 2 cups of cheese
Top with other half of mixture
Seal the edges
Bake at 350f for at least one hour and 15 minutes
I didn't say it was a healthy meatloaf, just a tasty meatloaf. I actually didn't think that was possible.

I Just Don't Understand
It has rained here in Plano ALL DAY LONG. Roads are flooding. Rescue missions are having to be done for people who choose to drive around barricades. It is still coming down. I don't like to be out in the rain. I like watching it, but I can't stand having it hit my skin. The commercial that sings "feel the rain on your skin" gives me the creeps.
My middle daughter loves to be in the rain. I don't know what is wrong with her. She didn't get that trait from me.
Since I hate being in the rain so much dinner was a "whatever is in the fridge and pantry" meal. I was not about to get out in that downpour.
I must say that I didn't like the pantry/frig combo this time. Sometimes it is a winner and I guess in a way it was. What drives me up the wall is that at least three of the occupants of this house liked the concoction. One of them is my pickiest eater. What is wrong with this boy's taste buds? He didn't get that trait from me.
Here are the ingredients of tonight's pantry/frig combo:
grits
hamburger meat
verde enchilada sauce
fajita seasoning
jack and cheddar cheese
mozzarella cheese

For dinner tonight...

I made Cinnamon Banana Almond Pancakes from scratch. Two out of four people voting gave these pancakes "two thumbs up" or I guess you could say "four thumbs up". One person said, "they're pancakes." One person complained about the pancakes constantly as he shoveled more and more pancakes into his mouth.

Puspus for dinner
Tonight during a lovely dinner of a chicken pot pie topped with grits and mexican cheese, Clay pointed out that the grits reminded him of puspus or "is it couscous?" We assured him that he meant couscous.
